Ultraviolet stands on top of our best restaurants in China because it is a high-concept restaurant that takes the dining experience to a whole new level. Conceived and conceptualized by the much acclaimed French Chef Paul Pairet, Ultraviolet has received a lot of accolades for its multisensory eating experience that goes beyond delicious food. The exceptional dining experience starts from the moment you step inside the restaurant whisked away into a room that doesn’t look like a dining hall. You’ll be surprised whether you are in for dining or watch a movie as the dining hall has only 10 seats, yes, the dining table can seat only 10 guests at a time.

If you are thinking that there would be other rooms to cater other guest, you are wrong. The restaurant serves only 10 guests at a time and hence you can expect everything is focused on you. And coming to the dining room, it is a windowless room with nothing but the table laid for dinner. There are no other tables or decors in the room. But the walls are adorned with video screens along with spectacular surround sound and focused overhead lighting.

Your dining experience starts when you hear a bell followed by an angelic hymn and 10 servers enter the room wearing blue aprons and bell caps carrying silver bowls. The mood suddenly changes as the AC/DC song “Hell’s Bells” fills the air while the first course of a wasabi-flavored frozen apple bite is being served. And the song and the video changes with each and every course, say when fish is being served, you can see the walls show some videos of waves splashing in a beach. But the real show stealer is the 20-course meal including signature dishes like Pop Rock Oyster and Truffle Burnt Soup Bread.

Q In the Kitchen

Born in France, Chef Paul Pairet started his culinary career worked through his way and currently owns around 3 restaurants in Shanghai, including the contemporary French restaurant “Mr & Mrs Bund”, “The Chop Chop Club” and the concept restaurant, “Ultraviolet”. The 3-Michelin star restaurant Ultraviolet was also ranked among the “World’s 50 Best Restaurants” in 2015.

Before starting his own restaurant, Chef Pairet travelled around the world and served in many famous restaurants in Hong Kong, Sydney and Jakarta. But only when he was at the Café Mosaic in Paris was he able to showcase his culinary skills to the world. He created his own French style of cooking with some innovative techniques under the guidance of Master Chef Alain Ducasse. The master chef himself arranged the next move for Chef Pairet by moving him to Istanbul to enhance his skills at the Ritz Carlton’s Cam restaurant. Pairet worked his magic and the turned the restaurant into a cutting-edge restaurant.

In 2005, Chef Pairet came to Shanghai to open his flagship restaurant, the Jade on 36 at the famous Shangri-La Hotel Pudong. Within 3 years, Chef Pairet made the culinary world turned towards Jade on 36 for his unique and completely original cuisine.
