The 2-Michelin Star restaurant the Tasting Room is a popular French restaurant in France located at level 3 of the Forbes Five-Star Nüwa Hotel in the City of Dreams casino complex. It was opened in 2012 by chef and owner Guillaume Galliot who has been sous chef in Raffles Grill restaurant in Singapore and also the famous Jaan restaurant in Beijing before starting his own. He was also trained at the Jardins des Sens.
Enter the Tasting room and you can see large bar area to the left and the dining hall to the right. The wine racks are filled with some of the finest collection of wines sourced from around the globe. The room is beautifully carpeted that not only complements the décor, but also lowers the noise levels to a great extent. The tables are well-spaced out and covered with neat white tablecloths.

The dining hall is large and circular shaped and comes with plush carpeting and walls draped in matching curtains and a beautiful modern rope chandelier on top. The art nouveau glassware was inspiring as the 2-Michelin star restaurant provides for a high-end dining experience. The menu started with a glass of Champagne Fleury Blanc de Noir that was beautifully blended only using black grapes and proved to be a great start for the evening.
Chef Fabrice Vulin at the Tasting Room comes with a fabulous culinary career of around 3o years working at Micheline star restaurants around the world and brings with him his very own version of the Haute Cuisine to the food circle in Macau. Chef Fabrice is renowned for his unique style and providing a contemporary touch on some traditional French cuisines. His philosophy about his cooking is to provide food that showcases humanity and friendship with ultimate selection of flavor and texture
Born in France, Chef Fabrice grew up in the Alpes region and from the early age itself he was drawn to seasonal and fresh ingredients and till now his passion for them have never waned. His glittering career has allowed him to travel through the world including Paris, Geneva, Valence, Marrakesh and the French Riviera before finally arriving to Macau.
Before joining the Tasting Room, Chef Fabrice helmed the kitchens at the 2-Michelin Star Caprice restaurant at Four Seasons in Hong Kong. He also serves as the Asia president of the coveted “Maîtres Cuisiniers de France”.
