Q In the Kitchen

Chef Aniello Turco started his culinary career at the early age of 13 at his parent’s restaurants and learned the basics of cooking from them. With a strong passion and dedication for cooking developed right form hi early age, Chef Turco decided to venture out from his family restaurant and to gain more knowledge about international cuisine, he started working under the Masters in this business, the legendary Alain Ducasse in Paris.

Having met Chef Marco Calenzo, the former Chef de Cuisine of Mio in London, he was offered the Sous Chef position in Apsleys and Chef Turco gladly accepted the offer. He pushed further to know the boundaries of the culinary world, he joined Michelin Starred restaurants in Noma, Copenhagen. And it was under the guidance of master Chefs at Noma could Chef Turco understand all about the process of fermentation and about the natural transformation of food which paved a way for understanding more about the ingredients and preparation skills.

According to Chef Aniello, the future of cuisine has arrived and has set its sights in the kitchens around the world and hence it is time to shy away from older way and innovate new techniques and styles to completely transform the way of cooking. But whatever happens everything should be done organically without the use of much chemicals.
