Chef Bombana was born in a Bergamo, Northern Italy and started his career as an apprentice in the Centro di Formazione Alberghiera under the able guidance of talented chefs, Ezio Santin at Antica Osteria del Ponte in Milan. Soon his passion for cooking and innovative thinking enabled him to the join the popular Rex Il Ristorante in Los Angeles. He didn’t take much time to become popular with the citizens of LA for his simple and unique presentation of dishes with regional flavor. Chef Bombana shot into quick fame with a chance to cook for famous Hollywood celebrities who celebrated many post-Oscar parties in the restaurant. He also credits his culinary skills to other top chefs like Gianfranco Vissani, Michel Rostang and Pinuccio Alia.
His talent and culinary skills reached worldwide audience when he was named as the “Ambassador of the White Truffle” by Piedmontese regional Enoteca Cavour in 2006. After the closure of the much acclaimed Italian restaurant, Toscana, Executive Chef Bombana took some time off to reflect on his future and then came back with a bang with his all-new favorite ristorante the 8 ½ Otto e Mezzo BOMBANA.
