RAW is certainly one of the best restaurants in Taipei that offers exceptional Taiwanese Haute Cuisine. Andre Chiang, considered to be one of the best chefs in the world and helms the kitchen at the RAW. The restaurant offers some exciting bistronomy cuisine made some unique cooking style which Andre Chiang developed while he was heading the 3-Michelin star restaurant in France, Le Jardin des Sens where he spent most of his culinary career and sharpened his culinary knowledge.

According to Chef Andre Chiang, the main objective of opening the RAW in his homeland Taiwan is to provide the Taiwanese with a unique and exceptional Taiwanese flavor with a modern touch that is created using seasonal ingredients and flavor from Taiwan.

The 60-seat restaurant is quite impressive with its exceptional food that blends the traditional Taiwanese cuisine with a touch of international flavor. And the restaurant is open for reservation only from Wednesday to Sunday. The interior of the restaurant is quite beautiful and designed by the Weijenberg Architects that is mostly focused on wooden based design. Lighting is also quite exceptional as they are specially placed above to reflect directly on the dish on the table to create a warm and intimate experience with your food. According to common fine-dining etiquettes, the cutlery is placed in the drawer in the table itself.

The RAW offers an 8-course meal and if you are foreigner, then the cost is just a fraction of what you would pay in a fine-dining restaurant elsewhere. But nevertheless, the food is exemplary and the service crew are also cordial and friendly and have very good knowledge about the food they serve.

If you are looking for some excellent gastronomic cuisine, then you can check out the Le Moût, one of the best restaurants that offer exceptional gastronomic food. Located in the busy Taichung area, Le Moût has been widely acclaimed from the day of its opening for its amazing French cuisine with a touch of Chinese elements cleverly combined. Le Moût in French means the process of creating wine by fermenting grape juice.

In a similar way, Chef Lanshu Chen, who heads the kitchen at the Le Moût just uses some common ingredients found locally and creates some exemplary dishes. Headed by Chef Lanshu Chen, the 4-storeyed restaurant is located one of the posh areas of the city. The interior of Le Moût is quite defining with beautiful chandeliers along with some exceptional modern art embracing the walls.

Even though het dishes are inspired by French cuisine, you can still feel the local Taiwanese flavor amongst most of the dishes. The restaurant is ranked 28 by the S Pellegrino’s “Asia’s 50 Best Restaurants” list and Chef Lanshu Chen also won the “Best Female Chef” award in 2014. She largely mastered her culinary skills at the Le Cordon Bleu in France under Jean François Piège and Thomas Keller.

Most of the dishes in her menu are quite delicate but there are also dishes that comes with strong flavors including the popular Pork dish. Overall, the meal at Le Moût is delicious combined with some awesome environment and friendly customer service.

While many restaurants open with pomp and close out quickly without making an impression or not serving quality food, the reason Joel Robuchon could be able to sustain the quality and service for many years throughout all his restaurants according to Chef Olivier is that they keep things simple and doesn’t get side-tracked trying out too many things. Including too much fusion in the kitchen can alter your course and shake your very base foundation.

The décor at the L’Atelier de Joël Robuchon is similar to all other restaurants with their signature red and black theme with stools with red leather near the counters along with large sized and beautiful pebbles and sea shells neatly displayed in the show case. The master chef wants all his restaurants to have a uniform décor and atmosphere.

Even though French cuisine is considered to be one of the best cuisine the world over, the Ephernite is in the making of one of the best restaurants that offers some exquisite French cuisine. Head Chef Vanessa has lots of experience working at 3 Michelin Star restaurants in France decided to open her own and flew over to Taiwan along with her husband and started their dream venture, the Ephernite. One of the interesting aspect about Ephernite is you don’t get the same menu the next day as each day comes with its own and different menu. The team at the kitchen headed by Chef Vanessa strives hard to bring the dishes that are only made using fresh and seasonal ingredients sourced from the local farms.

Both Chef Vanessa and her husband Claude are extremely cordial and takes their time to mingle with their guests and chat with them freely. Whatever you may ask, there is always a friendly smile from both of them and with their exceptional knowledge in the French cuisine they can answer you quite comfortably. Their main objective was to provide the Taiwanese people with a relaxed and calm environment that offers high-quality French cuisine at a reasonable price.

The menu largely focuses on French cuisine that are made using Taiwanese ingredients sourced from local farms. Even though some dishes do have some Taiwanese flavor, all the dishes are exquisitely French and you don’t see any kind of fusion in the making combining both Taiwanese and French in any way.

The 3-Michelin Star restaurant Quintessence offers some of the best French cuisine in Tokyo. Led by Chef Shuzo Kishida, Quintessence is considered to be one of the finest restaurants in Japan. According to Chef Shuzo Kishida, the key to success of the restaurant largely depends on how “caisson” or the art of fire is being used during cooking. This knowledge of dealing with fire while cooking was acquired by Chef Kishida while he was working at the L’Astrance in Paris. Even though the process is time consuming to roast the meat at low-temperature, it is imperative to extract the exclusive flavor from it.

And one more thing about Quintessence is that reserving a table at the restaurant is quite a daunting task as reservations are accepted 2 months ahead. In fact securing a table at the 3-Michelin star L’Astrance in Paris is much easier than booking a table in Quintessence. And only boking through telephone is accepted and no email bookings.

The interior of the hotel is well-designed with low-ceilings and slate tiled floors. There are total seven tables present in the dining room along with banquette along the wall and even a small private dining room. The wall above the banquette is beautifully designed with brown leather tiles and are dimly lit to provide a soothing atmosphere. The dark wood ceiling and the crisp linen tablecloths on every table adds to the environment.

Takazawa is definitely a place for crazy foodies. Named after its owner and executive chef Takazawa, the restaurant was ranked in the “Top 50 Restaurants in Asia” in 2014 and 2015. Many food critics and magazines get surprised for the fact that for such a high-class restaurant, it is yet to receive many Michelin Stars like other restaurants in Japan.

But it is after the restaurant decided to launch a small bar near the restaurant that it created a buzz in the Japanese dining scene as many locals and foreigners started pouring in to the bar for enjoying some quality drinks from one of the best sommelier in the world and also one of the best cocktail artist and also have some delicious food along the way at the very best kitchen handled by a celebrity chef.

During my visit to the restaurant, I was given a warm welcome and was given a tour of the restaurant along with the VIP room. The chef was kind enough to go over the food and drink menu available in the restaurant and also suggested some of the signature dishes that I could try for lunch. In most of the Japanese restaurants, the omakase style of ordering is preferred rather than the choosing the menu for oneself. Here you can provide your budget range and the Chef will take care about the best possible menu that will make for a fine dining experience.

Open in 2005, the Takazawa is a kind of family restaurant as Chef Takazawa handles the kitchen and his wife Akiko takes care of the guests. Located in Akasaka in a side street, you just need to take a flight of stairs to reach the restaurant. You can also see a poem written in the handrails of the stairs highlighted with beautiful lights. Even though there is no menu to choose from, the chef will make it a memorable evening with delicious food along with the finest drinks sourced around the world.

The hotel comes with 3 sections where you can find the Table du Joel Robuchon in the ground floor, the gastronomic restaurant in the second floor and private dining rooms in the top floor. The dining hall is pretty awesome with high ceilings adorned with beautiful chandeliers and the floors with dark carpets.

Some of the signature dishes that you can’t miss out while dining in the Joel Robuchon are the Oscietra caviar that is served in a gorgeous jelly and the cold ravioli of lobster with honey dressing along with Japanese radish.

The Hajime restaurant is one among the few with 3-Michelin Star restaurants in Japan. The restaurant is pretty much spacious with large space between two tables and there are only a limited number of tables.
